Q. Is it possible to search a category for all of the addresses w/e-mail?

A. Yes. First run the Category search. Then you can create an Advanced query (and save for reuse in the future) that contains the following entry:

Search on: Current List Only

All Email Fields <is not empty>

This will give you all the records from your current search that have some email address.
